We had been given a basketful of apples. Friends of my parents had a small orchard. I grabbed an apple and bit, inside it was pure white. It was wonderful.

I was eight years old and I had tasted my first snow apple from Red Hill.

Close to thirty years later most of the orchards in Red Hill have been replaced with grape vines. My memory of my first Mornington Peninsula Pinot Noir or Chardonnay is more hazy, but no more less enjoyable.

Now I have the ultimate working environment. Cooking for a country house hotel such as Lindenderry at Red Hill, I have the winery on site and access to the Peninsula’s best produce.

The Mornington Peninsula is a unique region in having the hinterland of Red Hill and the surrounding market garden plains meeting the two bays and the ocean. This relatively small area contributes a diverse range of produce and constantly features greatly on the Lindenderry Menu.

Flinders Farm Tomatoes, Sunnyridge Strawberries, Tallowwood Berries, Flinders Mussels and Gamekeepers Meat to name a few ………….to be continued dinner is ready & waiting
