Originally from Denmark, Steffen brings a wealth of experience to Paringa.
From the outset of his career he has worked for only the finest restaurant establishments.
His culinary performance at Paringa reflects his past through exquisite French technique yet is also firmly grounded in his present using the best regional produce the Mornington Peninsula.
Steffen comes to us from the U.K where he held the position of head chef at Lundum s restaurant in Kensington, London.
Lundum s was awarded 3 rosettes whilst under Steffen s leadership.
Keen for a new challenge a higher quality of life Steffen headed to our shores where he had one clear career objective- to pursue his love of Australian wines to merge this with his passion for the Australian gourmet industry.
His menu truly reflects this with dishes such as Chardonnay poached pears with blue cheese souffl , Assiette du canard, Confit pork belly served with apple tarte tatin shiraz emulsion sublime desserts such as Viognier Sabayon ne Marquise with local black mission figs.
But perhaps his most impressive dish is, of course, his signature Trilogy of Quail .
Of his food Steffen says quite simply.
There is nothing pretentious in my cooking, just a humble desperate search for perfection .

a u Time to get away from it all Winds Vineyard Cottage One of the Mornington Peninsula s Finest Tables Stephen Downes - Herald Sun The Age Good Food Guide Chef s 2014 Paringa Estate s recent Age Good Food Guides Chef s hat award has brought considerable increase in interest in this fine dining restaurant.
Owner Lindsay McCall is thrilled with how the restaurant in going.
It has been a steady work in progress since the appointment of talented Chef Julian Hills two years ago.
A re-furb of the Cellar Door and adjoining Restaurant took place in 2012 to create a smart modern feel, but in accord with the existing rustic winery building.
The appointment of Restaurant Manager George Musat from Brisbane in early 2013 completed the team.
However it is Julian Hill s food that has been attracting a lot of attention.
Julian lives and breathes food his is constantly searching the Peninsula for new ingredients.
His daily beach walk with the family dog allows him to collect beach herbs, succulents and flowers that are included in a number of his dishes.
The menu is constantly evolving with the changing seasons and as a new produce comes available.
The Estate s own garden has become an important source of fresh herbs, flowers and vegetables that are integrated into many of the dishes.
A quote in the Age Good Food Guide says it all...
the food of Chef Julian Hills broaches no argument that this is a very special dining experience .
