002 www.visitor.com.au 81 Cottage www.peninsulawine.com.au 45 Paringa Estate is very excited to announce the appointment of their new head chef, Steffen Jensen.
Originally from Denmark, Steffen brings a wealth of experience to Paringa.
From the outset of his career he has worked for only the finest restaurant establishments.
His culinary performance at Paringa reflects his past through exquisite French technique yet is also firmly grounded in his present using the best regional produce the Mornington Peninsula.
Steffen comes to us from the U.K where he held the position of head chef at Lundum s restaurant in Kensington, London.
Lundum s was awarded 3 rosettes whilst under Steffen s leadership.
Keen for a new challenge a higher quality of life Steffen headed to our shores where he had one clear career objective- to pursue his love of Australian wines to merge this with his passion for the Australian gourmet industry.
His menu truly reflects this with dishes such as Chardonnay poached pears with blue cheese souffl , Assiette du canard, Confit pork belly served with apple tarte tatin shiraz emulsion sublime desserts such as Viognier Sabayon ne Marquise with local black mission figs.
But perhaps his most impressive dish is, of course, his signature Trilogy of Quail .

a u Time to get away from it all Sea Winds Vineyard Cottage Paringa s 2014 Age Good Food Guide Chef s Hat has not seen Chef Julian Hills wrest on his lorrels.
If anything Julian has been further pushing the boundaries with his creative innovative menu designs.
PERFECTION at Paringa AUTUMN MEANS MUSHROOMS The coming of the first autumn rain heralds the beginning of the mushroom season.
Chef Julian Hills loves foraging for and collecting his own mushrooms.
As Julian says, they are free, fresh and fantastic to create new dishes with I just love them.
DEGUSTATION DINNER WITH BYO WINE Our next degustation dinner where diners are encouraged to bring their own wines is on 4th April 2014.
This event occurs every 2 months and has become a really successful event with Julian trialing new dishes for up and coming menu changes..
the food of Chef Julian Hills broaches no argument that this is a very special dining experience - The Age good Food Guide 2014 The Age Good Food Guide Chef s 2014 081.indd 1 30 03 14 10 07 PM
